Lemon pesto grilled shrimps are great way to explore the richness of parmesan cheese, bitterness of pine nuts, perfectly complimented and blended together with zesty lemon and crispy basil leaves. These absolutely flavorful guys will become desired guests of your party table.
1 pound large shrimp, peeled and deveined
2 tablespoon basil pesto
1/2 cup chopped fresh basil leaves
1 large clove garlic, finely minced
1 1/2 tablespoon extra virgin olive oil
1/3 cup freshly squeezed lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly crushed black pepper
Combine together pesto, basil, olive oil, lemon juice, garlic, salt and pepper. Mix well. Add shrimp and stir to coat. Marinade 30-45 minutes, covered and refrigerated.
Preheat a grill pan over high heat.
Grill the shrimps for 2 minutes per each side.
Serve with grilled vegetables, pasta or salad.
